Let steep for 30 minutes to 1 hour, or until it’s barely warm, preferably cold. The heat is necessary to extract the bioactive compounds in ginger. Cold water is not that effective.

The vitamin C content in lemon decreases as the heating time and storage increases. Cucumber is also heat sensitive so it’s best to be added last with cold water.

As for ginger’s antioxidant capacity – it doesn’t decrease much when exposed to heat. One study actually found that moist heat treatment induced significantly higher quantity and potency of ginger’s bioactive components.

How Long is Cucumber Lemon Ginger Water Good For?

Try to drink a batch in a day or two and don’t keep it for too long in the fridge as it tends to loose the water soluble vitamins with time. If you choose to leave the cucumbers, lemon and ginger in water, they will start to go soft and degrade the following day.
And if you leave them in for another day, the water may start to spoil. So I like to infuse the water for several hours, then strain and transfer to the fridge, the water will keep good for another day or two.

When is the Best Time to Drink Cucumber, Lemon, and Ginger Water?

The best time to drink it is on empty stomach: when you wake up, before a meal, during exercise and before bedtime. A glass first thing in the morning may make it easier to maintain healthy habits and increase your daily water intake. Can I Reuse the Ingredients for a Second Batch?

Storing leftovers: If you have any infused water left over after a day, remove all before refrigerating the rest. If you leave the cucumbers lemon and ginger in the water for more than 12 hours as they will tend to soften and spoil.

Freezing: You can freeze the water into ice cubes and use later.

Ingredients
 

  • 2 cups hot boiling water
  • 1 large lemon - washed, thinly sliced
  • 1 medium cucumber - washed, sliced
  • 1 inch ginger - peeled and thinly sliced
  • 4 cups cold filtered water
