In order to make this Christmas snowflake cake gluten and dairy free, I had to adapt the recipe that came with the nordic ware snowflake cake pan – the result: a moist and delicious treat!
My gluten and dairy free free version is loaded with wholesome ingredients and is naturally sweetened with coconut sugar, stevia, and fruit. I didn’t use any pre-mixed starchy gluten free flours, there is no butter, no milk and no refined sugar.

I made this snowflake cake pan recipe quite often in the last couple of months and my husband who loves gluten filled desserts is quite fond of it.
He can eat half of this cake in a single serving as breakfast. And my three year old daughter is helping him with the other half!

How To Make This Snowflake Cake Pan Recipe
Making a simple cake still needs a good presentation, for this I’m going to use a snowflake bundt pan.
A Bundt pan is actually a trademarked piece of kitchen equipment, not just a generic style of pan. It was invented by H. David Dalquist, the founder of Nordic Ware, in 1950. Some 68 years later.
Nordic Ware is still making good quality bundt pans, they have tons of pan shapes more elaborate than the original ridged one.
It’s the holiday season, after all. That’s why I chose a Nordic Ware snowflake shaped Bundt pan. This is going to be the star of any dessert this year, and will totally eliminate the need for more complicated cakes. This is not a sponsored post by the way!
Healthy Holiday Bundt Cake Recipe
As for the recipe, yes it is possible to bake a delicious gluten and dairy free Christmas cake without processed ingredients.
The vinegar and the baking soda gives it a nice lift so you don’t need baking powder. The fine flours actually provide nutrition and texture and the applesauce lends moistness while allowing you to omit dairy.
The cake can be made in a variety of different cake pans. It can also be made into cupcakes and mini loaves. You just need to adjust the baking time as needed.
How To Store This Christmas Snowflake Cake
I store the bundt cake at room temperature, either uncovered or very loosely covered.
This is a moist cake and the crust will soften a great deal if it is stored airtight.
Christmas Snowflake Bundt Cake – Gluten Free, Dairy Free Recipe
Ingredients
- ¾ cup apple sauce
- 3 large eggs - organic, pasture raised
- 1 cup coconut palm sugar - organic, raw
- 1 cup buckwheat flour
- 1 cup amaranth flour
- 1 tsp vanilla extract
- ¼ tsp Himalayan salt
- 1 cup apples, - grated
- ⅓ cup plant milk, - I used homemade hemp
- 1 tsp baking soda
- 1 tsp apple cider vinegar
- 1 tsp cinnamon
Instructions
- Preheat oven at 380° F.
- In a bowl, beat eggs and coconut sugar until frothy. Add the apple sauce, vanilla extract, salt, plant milk, cinnamon and mix to combine.
- Add the grated apples and sift the flours on top and mix again until combined.
- At the end add the baking soda and the apple cider vinegar, mix gently until incorporated.
- Prepare the snowflake Bundt pan by spraying well with non-stick cooking spray. Sprinkle with some amaranth flour or any gluten free flour of your choice, in order to prevent sticking.
- Pour batter into prepared pan, turn the heat to 360 F and bake for 40 minutes until golden.
- Remove the cake from the oven and cool in the pan on a wire rack for 10 minutes, then invert to gently remove the cake from the pan.
- Sprinkle some powdered sugar or stevia based sweetener. Serve!
