Baking soda mixed with an acid (apple cider vinegar or lemon juice) acts as a leavening agent. These should be added at the end when you are ready to pour the batter in the waffle maker as the bubbles will deflate if kept for too long. Baking soda not only reacts with the acid to create lift in the waffle recipe, it also creates an alkaline environment. And that means better browning.
